Sachertorte, the way Vienna made it in 1869

Johann Hoffmann learned his trade in Vienna and brought the recipe home with him: a dense chocolate sponge, a thin layer of apricot jam, a dark glaze that sets like glass. We still make it his way, by hand, in the copper kettle he bought in 1869.

Served the Viennese way, with unsweetened whipped cream. Whole cakes to order, a slice every day at the counter.

Five generations of Hoffmanns

Johann Hoffmann opened the shop on the market square in 1869. Rzeszów was then a town in Galicia, under Austrian rule, two years into the new Austria-Hungary, and the shortest road to good chocolate led through Vienna, where Johann had served his apprenticeship. He brought back a cake recipe, two copper kettles and the habit of serving cake with unsweetened cream.

We do not use colourings or ready-made fillings. If a praline is green, it is because of pistachio.

1869Johann opens the shop on the market square. Galicia, Austria-Hungary.
1921His son Karol rebuilds the workshop after the war and makes the first pralines.
1951The shop is nationalised. The family keeps working in it as "Confectionery No. 3".
1991Granddaughter Irena gets the premises and the name back.
2019Ola, the fifth generation, takes over the kettles and starts roasting the beans herself.
